Proof that I am entirely too much my father's daughter (as in I got the bachelor gene, apparently...)
So, just cooked this, and it's actually pretty darned good. Worst 'dietary damage' is probably the prepackaged deli meat (preservatives, salt, etc). Other than that, seems to be a good 'good food' thing. Of course, this is also assuming you share my idea of what can taste good.
So, without further ado:
Bacholorette Stir-fry Thang
What you need:
A counter grill (or you can do this in a frying pan, I'm sure...)
(Ballpark) one cup of mixed green, red and yellow bell peppers (I had two, so...)
(Ballpark) half a cup of white onion, chopped.
A little under a teaspoon of extra-virgin olive oil (yes, I took the advice!)
Roughly six slices of extra-thin smoked chicken breast (In my case, it was Hillshire Farms 'Rotisserie Seasoned Chicken Breast')
...yes, that's it. Nothing else, unless you want tortillas to wrap the end result in. I didn't have those, so I didn't use them...
What you do:
Heat the grill (or pan). Don't bother with Pam or anything--you shouldn't need it.
While that's happening, take the peppers and onions and put them in a sealable container. Add the olive oil, close container, and shake that bugger until everything is coated. (See? Told you you wouldn't need to do anything to the grill/pan. ^^)
If you have time, take the chicken slices and shred them, putting them aside.
Once the grill.pan is ready, dump the veggies in. Grill/Saute to taste.
Add mixture to the bowl with the chicken shreds. Mix well. If you're fortunate enough to have tortillas, have at. If you want salsa, likewise.
Eat.
Believe it or not, the 'smoked' chicken has enough flavor to negate the need for anything extra like salt, seasoning, and so forth. At least IMHO. And, like I said, other than the olive oil and whatever is in the chicken...it's pretty much as healthy as you can get.

Date: 2007-07-17 01:32 am (UTC)Olive oil is your friend. I use it for everything these days from eggs on down. Try it next time you cook rice, just a bit in the rice water where you might ordinarily use butter.
