Anne's 'I Gotta Eat These Veggies Before They Go Bad' Linguini and Shrimp
What's in It?
1/2 cup cooked wheat linguini
8 large shrimp
1 Teaspoon extra virgin olive oil
1/2 medium onion, sliced or diced as preferred
2 cloves fresh garlic, minced
1/2 cup already steamed cauliflower
1/2 cup already steamed broccoli
3 large mushrooms, diced
1 Tablespoon grated low-fat parmesian cheese.
Lemon juice for flavor (approx. 1 teaspoon)
Parsely flakes, for color and digestion
What Do I Do?
Cook the linguini per directions
Grill the shrimp plain (no butter or other coatiing)
Sautee the onions and garlic with olive oil in a pan until they start to get brown
Add in the broccoli and cauliflower
Pull tails off the shrimp and chop into half-bite sizes, or leave as is. Add into the mix. Keep sritting on low heat to keep warm ince everything is heated. Youshouldn't have much, if any 'stray' oil by the time you're done.
Drain linguini and put on plates. Sprinkle parsley over pasta.
Pour mix over linguini
Sprinkle with parmesian.
Enjoy!
Prep time: 10 if half the stuff is already ready, 20 if you have to chop a lot (IE, you're using fresh instead of left overs like me), and 40-50 if you have to steam the veggies.
Serving size2-4 depending on how much you eat. For me, it's 3 servings.
