Mission Accomplished!

I should have taken a picture for proof, but I didn't.

What I ate:

4oz cut of steak
sautee'd onions, garlic and mushrooms
1 fried egg, sunny side up
1 slice of wheat toast (to sop up the yolk and other yummy leavings)

I was also bad by using butter for the sautee, and then adding the steak halfway through, and then the fried egg very last, all to the same frying pan.

But it came out delicious. :)
Now I can eat fruit and veggies for the rest of the day! *g*

Damn, that sounds gooooood!

I had a half-cup of frozen spinach, thawed in the microwave and mixed with sour cream and cream cheese, spread on wheat toast, topped with a sunny-side-up egg and some celery salt.

That also sounds good, actually. excvept I don't have cream cheese in the house either.

It's a good way to get in a serving of vegetables right off the bat in the morning. I use the low-fat sort of cream cheese. Fat-free doesn't melt well into the hot spinach and gets kind of globby instead. You want a creamed-spinach sort of consistency.

Think it would work well with fresh spinach? I've gotten into the habit of buying a bag or two of the 'salad bags' of fresh spinach the past few months.

Prolly, if you diced it fine. I think with fresh I'd chop it and heat it WITH the cream cheese, then stir smooth, instead of adding the cream cheese to the spinach after heating. I bet that'd work just fine!
I keep frozen because I can't use up fresh before it goes bad, and frozen is only $1 a bag, usually.
